  1. Preheat oven to 180 C / Gas 4. Lightly grease a small loaf tin.
  2. In a large bowl, cream the butter and sugar together until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in vanilla and banana. In a separate bowl, sift together flour, baking powder and salt.
  3. Blend the banana mixture into the flour mixture; stir just to combine. Fold in walnuts. Pour mixture into prepared loaf tin.
  4. Bake in preheated oven for 1 hour, until a skewer inserted into centre of loaf comes out clean.

Superb. Like others, I always sprinkle brown sugar on top. One thing I'd note to anyone making a banana bread for the first time: Trust your instincts! Bananas vary, so if yours aren't very sweet, add more sugar. If yours are especially moist, add a bit of extra flour (the finished dough should be like a thick muffin batter). This recipe is forgiving enough to work even without these alterations, but a sense of adventure really helps take it up a notch.-07 Jan 2006

For probably 40 years I have made a banana bread with a recipe I got from a wonderful home ec teacher which included sour cream. Since I didn't have sour cream, I made this recipe. This is good, but more cake-like...not nearly as rich or dense as my old favorite banana bread which I will continue to make. The sour cream must be what makes the difference!-27 Dec 2007

Absolutely delicious! It was my first banana nut bread, and it was easy and turned out perfect. I used three bananas and about 1 1/2 cups walnuts, and I had to bake it a little longer, about 1hour and 20 minutes.I will definitely make this again! Ingredients

  • 3 1/2 cups (454g) sliced bananas (4 to 5 medium bananas)
  • 8 tablespoons (113g) butter, room temperature
  • 1/2 cup (106g) brown sugar, packed
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/4 cup (85g) honey
  • 2 large eggs
  • 2 cups (227g) King Arthur White Whole Wheat Flour
  • 1/2 cup (57g) chopped walnuts, optional toasted if desired

Instructions

Preheat your oven to 350°F. Lightly grease a 9" x 5" loaf pan.

Mash the bananas with a potato masher or fork or purée them in a blender or food processor.

In a large bowl, beat together the butter and sugar until smooth. Add the vanilla, baking soda, salt, and bananas, beating until well combined. Beat in the honey and eggs.

Add the flour, then the walnuts, stirring until smooth.

Dark brown sugar contains more molasses and more moisture than light brown sugar. Usually, when something has a different moisture content, we freak out a bit because moisture changes things. Easy! Preheat your oven to 350 degrees and butter the bottom and sides of a standard loaf pan. Start by adding brown sugar and melted butter to a large mixing bowl and beating them together.

Add in the vanilla and egg and mix to combine. In a separate bowl, add all purpose flour, baking soda, baking powder, cinnamon and salt and sift together before adding the dry ingredients to your wet ingredients. Lightly mix together until just combined. Remove the peels from your over-ripe bananas and put them into a small bowl. Using the back of a fork, mash your bananas well and then pour them into your banana bread batter.

Add the walnuts to the batter as well and then using a large spoon or spatula, stir by hand a few swipes until everything is incorporated.

Pour the batter into your prepared loaf pan and bake for 45-50 minutes or until a toothpick comes out clean when inserted. Let the Banana Walnut Bread cool for 15 minutes before running a knife around the inside edge of the baking pan and turning the bread out upside down. Turn your banana bread right side up and move to a cooling rack to cool completely.

Need I really say anything more to convince you? Good ol’ banana bread… that ingenious way to use up overripe bananas. I am waxing eloquent about this humble snack/dessert/breakfast bread, because it’s been a while since I baked banana bread.

You see, back when I’d just started this blog, I found a recipe with peanut butter in it (you can find the recipe here, it is tried and tested and I have got lots of rave reviews about it) and it was insanely delicious. Didn’t ya hear me? I said it has peanut butter in it! And oh, I also have a peanut butter glaze recipe to slather on top of it. Since then, every time I craved banana bread, I made it with peanut butter and glaze. That can be rather heavy, as you can imagine. So mostly, I let those stinky, brown bananas go to waste.

Then I found this recipe on Pinterest that claimed to be THE best banana bread recipe. I tried it and loved it. So I am glad to say that I have resorted to making banana bread again, of course with some modifications to the original recipe. The main alteration being the amount of sugar used, of course. 1 1/2 cups of sugar in a 9࡫ loaf just sounded too much even for a sweet tooth like me. The last time I made this, I added a handful of chopped walnuts to the batter and teeny spoonful of brown sugar was sprinkled on top for a crunchy crust. It was amazing. Chocolate chips would be nice too.

You will need:

  • Eggs – 2, large
  • Oil – 1/2 cup
  • Buttermilk – 1/3 cup (or substitute with a spoonful of yogurt mixed with regular milk to make up 1/3 cup)
  • Brown sugar – 1 cup, lightly packed + 2 tbsp (to sprinkle on top, optional)
  • Ripe bananas – 1 cup, mashed (2-3 bananas)
  • Vanilla extract – 1 tsp
  • All purpose flour – 1 3/4 cup
  • Baking soda – 1 tsp
  • Salt – 1/2 tsp
  • Walnuts – a small handful, roughly chopped
  • Pre-heat the oven to 325 deg.F and line a 9࡫ loaf pan with foil.
  • Beat the eggs, oil and buttermilk together till creamy.
  • Add the mashed bananas, vanilla extract and brown sugar and beat till combined.
  • Sift the dry ingredients together and add to the batter. Mix till just combined. Add the walnuts too.
  • Pour into the loaf pan and smooth the top. Sprinkle a couple of tablespoons of brown sugar on top, if you like.
  • Bake for 50-60 minutes till the top is nicely browned and it passes the toothpick test. If your bread is taking too long to bake and the top is browning too rapidly, tent with foil and bake till done.

The teeny-weeny sprinkling of brown sugar makes the crust totally delicious. You could add a small handful of your favorite nuts or even chocolate chips for a decadent treat.

Nothing beats the smell of cake or bread baking in the oven. And banana bread combines the best of both worlds. Is it bread? Is it cake? It’s super banana bread (with brown sugar and nuts!)… yum!!

It makes the perfect tea-time snack and a fairly guilt-free breakfast too.

It&rsquos more of a breakfast bread. It eschews chocolate in favor of whole grain oat flour and toasted walnuts and a more restrained use of butter and sugar.

It fits a classic banana nut bread flavor profile, but the oat flour and brown sugar and the crunchy dusting of turbinado sugar give it a little extra depth.

I love oat flour. So many whole grain flours have a heaviness to them, but oat flour feels so light. And it&rsquos a natural flavor partner for brown sugar and bananas and walnuts.

(And if you like the combination of oat flour and brown sugar, you should try this strawberry rhubarb crisp with oat flour.)

It&rsquos also something that you can make yourself from rolled or quick oats&ndashall you need to do is pulse them in a food processor and you have oat flour. Or you can go with the pre-milled versions from Bob&rsquos Red Mill or King Arthur Flour or any other producer you like.

I went through a phase with my cooking where I was always adding something more&ndashanother spice, another flavoring&ndashto make my recipes more interesting.

Lately, I&rsquove been drawn to the idea of simplifying, stripping things down to the bare essentials so that each flavor can stand on its own.

The only extra on this bread is the sprinkle of turbinado (or raw sugar), which adds a little textural contrast and serves to enhance the brown sugar flavor rather than competing with it. It also gives this homey banana bread a glint of sparkle when it catches the light.

This made a lovely breakfast for most of last week. When it was gone, Dan and I were wishing we had more.

This recipe is my favorite banana bread recipe ever. I half the recipe and only make one loaf because it's only for two people. The only substitute I do is 2/3 of cup of agave syrup for the sugar and I beat the eggs and agave a minute or two longer, because it's different consistency. The end product is a perfect banana bread. Thanks for a great recipe, Joanne.

I have been making this banana bread for years. Now that my kids are in college, they ask for it in their care packages. I sometimes add dark chocolate chips. When I have over ripe bananas, I throw them in the freezer and thaw them before adding them. Seems to make the bread even more moist.

Each time I make this a little differently, depending on what's in the kitchen, and it is always delicious. This time: used 1 part oats, oat milk and oil instead of creme fraiche, added chocolate chunks, pecans instead of walnuts. Doubled the cinnamon. Also used almond liquor instead of vanilla. Fabulous!

Very tasty banana bread! But I will reduce the sugar next time. A cup+ per loaf is too much if you have very ripe bananas. I like another reviewer's suggestion of 1.5 cups.

Best banana bread recipe ever. Instead of white sugar I make it with 3/4 cup brown sugar and 3/4 cup turbinado sugar. I also substitute whole milk yogurt for the creme fraiche.

15 years and this is my first review. This review merits 4 stars because not only is the bread made from the original recipe wonderful and reliable as written, it is also highly versatile depending on your tastes that day. Sometimes reduce, as others, the sugar overall, and sub 1/2 brown sugar for white other times I've added 3/4 cup pineapple chunks, 2 generous tsp rum and 3/4c coconut flakes other times upped the cinnamon and added cardamon, ginger, nutmeg, ground cloves to make it more of a spice cake banana bread. Finally, I love that it makes enough to keep one loaf and give another (also have made muffins and mini loaves w/o changing the recipe). My go-to banana bread recipe!

Used whole wheat flour instead of all-purpose and reduced the sugar content. Like the other reviewers, used sour cream instead of creme fraiche. Tasted phenomenal.

Just wanted to add to all the glowing reviews that I don't have two metal loaf pans, only one, so I made the double recipe in a standard-size bundt pan. Came out great. I followed the suggestions of others by cutting down on the sugar to 2 cups, using 1 cup brown and 1 cup white. I also used 1/2 cup coconut oil and half cup veg. I like a very spicy banana bread so I upped the cinnamon to about 2 tsps, and added ground ginger, cardamon, nutmeg (about a 1/4 tsp each), and a pinch of cloves. My oven is slow and so total baking time at 350 was about 1 hour and twenty minutes. Divine.

This one clinches it for me. I just deleted another fine one, but this is the best. I happened to have enough whipping cream left from Christmas to make the creme fraiche. I also was thrilled to clear my freezer of the 6 overly ripe bananas I always stash. I am back in the habit of using my old sifter. I added 1/2 white and 1/2 brown sugars, as many noted in their reviews, and kept it at 1 cup each, and used a heaping tsp. of cinnamon - a bit more next time. I might also try some shredded fresh ginger, since I loved it so in the chocolate-covered gingerbread recipe I made for Christmas, from this site. I added a cup of chopped pecans I had on hand. My new oven is hot, so I did 325 for an hour, and it was perfect. Warm from the oven, with cream cheese, and it is divine. Hey, if one goes through all this, shouldn't we get TWO loaves?!

This is the best banana bread recipe. I freeze my bananas whole, with the peels on, when they get brown and then run them under hot water to easily cut the peel off. It takes 6-8 bananas to make 3 cups, mashed. I also use sour cream or yogurt instead of creme fraiche. Everyone loves this bread.

Delicious. I doubled the cinnamon and cut the sugar down to 2 cups (probably could have been cut down to 1-1/2 cups but I'll try that next time). I keep kosher, so I left out the creme fraiche, though I'm sure it's a wonderful addition. I also left out the nuts, as I don't eat those either (medical reasons) will add raisins or dried cranberries next time.

I've made this a number of times over the years. It's a good basic recipe. I never have creme fraiche so usually sub in sour cream or nonfat yogurt. I've also occasionally substituted almonds for walnuts. And I sometimes round up the cinnamon. If I'm in a hurry or feeling lazy, I won't sift the dry ingredients but will dump them in a bowl and mix them with a whisk. I've found the the temp is a little too high so I've been cooking at 325' and check at 55 mins. One of my loaf pans is smaller then the recipe calls for and it always finishes earlier.

I love this bread - I make it several times a year ( I use sour cream instead of CF) and it never fails. I also make miniature loaves (about eight) at Christmas to go in gift baskets. Great shelf life. I also freeze one and can slice & toast and top with fruit and cream for a quick winter dessert. You CANNOT go wrong with this one!

Great recipe. the bread comes out very moist and tasty! I substituted and used plain yogurt and used more cinnamon than called for and it was fantastic. Everybody loved it!

Great banana bread recipe with a few minor changes. I reduced the sugar to 2 cups and used half white and half brown. Increase the cinnamon to 1 tsp and add 1/2 tsp nutmeg. I also increased the nuts to 1.5 cups and used pecans . Although I forgot to add the sour cream, it still came out super moist and delicious.

I have made this recipe so many times. It is my staple recipe for Banana Bread. I love that it makes two loaves, in fact today I added a few extra bananas and actually made 3 full size loaves. Also, I will add cocoa nibs, for a chocolatey taste, alongside the walnuts or even instead of.

Used Brown sugar instead of white - and was able to easily halve the recipe since I had only three bananas to use. Used Sour cream instead of the crème fraiche like many others. Very good - crust turned out very brown due to the brown sugar though- looked more like a spice bread but tasted really wonderful!

Was a great bread. I too used sour cream and hlf the oil but added spiced rum to make up the difference. Added a few drops of banana flavoring as well. Otherwise I followed the recipe and was perfect.

Great banana bread. Followed previous reviews and used sour cream in place of creme fraiche, halved the recipe yet used full amounts of cinnamon and vanilla while reducing the sugar further. Added chocolate chips and it was great.. disappeared immediately once my roommates tasted it!

BEST Banana bread ever. I make this recipe all the time. I made it this morning in a hurry and forgot to add a 4th egg, used 1/2 and 1/2 for the creme fraiche and it still turned out super moist and delicious. It has never disappointed me and everyone asks for the recipe every time!

I agree, super moist, delicate texture! I've made many banana bread recipes and this one is definitely #1. I will also reduce the sugar, but an easy fix to an otherwise perfect recipe.
