Dough: In a bowl sift the flour, put the yeast and salt. Pour warm water, gradually and knead. Finally add the oil and knead until incorporated. Cover it with a clean towel, let it grow in a warm place.
Other stuff: Drain the mozzarella well, cut it into cubes. Washed tomatoes, cut them into round slices removing the stalks. Once the dough has risen, turn it over on the work table, sprinkle a little flour on it first. Spread a thicker sheet. Wallpaper with baking paper on a 24/37 cm tray, place the sheet of dough. Put the pieces of mozzarella, tomato slices, cherry tomatoes and sprinkle a little salt. Beat the egg foam, then pour it lightly over the whole tart. Sprinkle grated Parmesan cheese and seeds on top. Put the tart in the hot oven, at 180 degrees, for 30-35 minutes, until the tart catches a nice crust on top and the dough is baked.
