For the cocoa top we need the following:
- 6 eggs
- 6 tablespoons of sugar
- 100 ml of oil
- 4 tablespoons of flour
- 2 tablespoons of cocoa
- 1 sachet of baking powder

The recipe for the cocoa top is the original one. Mix the eggs with the sugar until they double in volume. Then add the oil, little by little. At the end we add the flour in which we mixed the baking powder and the cocoa. Gradually incorporate the flour into the dough until you get a fine and airy dough. Put in the preheated oven for 20-25 minutes or until the toothpick test passes. After baking, let the countertop cool.

Cream is made from the following ingredients:
- 200 g butter
- 150 g of sugar
- 500 g of cottage cheese
- vanilla essence

The butter must be soft before we can mix it with the sugar. Mix them well, then add the cottage cheese and vanilla essence. The cream obtained must be fine, without lumps.

It wouldn't be the first time. The last combination of this kind was based on smoked salmon and pieces of parmesan placed on a slice of toast greased with butter.

This time I gave up canapés, and salmon was replaced by tuna (still smoked). The texture and taste are totally different, so I tried a different assortment of cheese. It turned out to be a spicy Gorgonzola, but it could also have been a Roquefort.

3. For the Fanta cream, we prepare the pudding according to the instructions on the envelope, only instead of milk, we use Fanta.

4. To form the cake, line a wafer sheet with 2-3 tablespoons of walnut cream. On top, add the second sheet that we cover with Fanta cream. We do the same until we finish all the ingredients.

You have been visiting her blog for a long time and I have been planning to prepare for a long time Fanta cake seen at her. So far, the opportunity has not arisen, but because today is a special day, yesterday I made this cake, for me but especially for my neighbors, relatives and friends, be they Elena and Constantini or not, to whom I shared something of the mouth in remembrance and remembrance of my father, who taught me to bake and cook.

I made some small changes to the recipe, because I needed a double portion, especially for the cream and icing. But let's see what steps I followed to make two Fanta cakes:

For the countertop I used like this: 4 eggs, 8 tablespoons sugar, 5 tablespoons flour, 2 tablespoons black cocoa (ie very good quality), 100 ml oil, 1 sachet baking powder, rum essence.

For cream cheese: 500 g cottage cheese, 7 tablespoons powdered sugar, a packet of butter (200 g), 1 packet of vanilla sugar.

For Fanta jelly I used: 2 sachets of Bourbon vanilla pudding, 6 tablespoons sugar, 800 ml Fanta juice, orange essence, 1 small sachet of gelatin (optional).

Mix the egg whites with the sugar, then add the egg yolks, oil, baking powder, rum essence, cocoa and flour. I mixed the last two ingredients at speed 1. I put the composition in a large cake form (diameter 28 cm) lined with baking paper, about 40 minutes on medium heat, in the preheated oven. My countertop came out about 3 fingers thick, so I cut it in half.

I mixed the butter with the powdered sugar until a cream came out (which was cut, that is, the butter was watery, but I did not panic at all, because in this case, the resulting syrup surplus went into the counter and was ex-ce-lent! :)), then I incorporated the cow's cheese (from the market, it's a cheese specific to the Moldovan area, the soft and buttery cream can also be made with mascarpone and I'm sure it would be much better that way). I put the cream in the fridge.

I made the jelly like this: I put the contents of the pudding sachets in a kettle and mixed it with about 100 ml of Fanta. The remaining 700 ml, I put them on the fire together with the sugar until the juice started to boil and the sugar dissolved completely (initially I put it in a bain marie, but I saw that the jelly did not stick to the bowl so I put everything directly on fire). I poured the pudding pudding powder over the boiling Fanta syrup and stirred continuously until the jelly thickened, then set aside, continuing to stir vigorously for another 2-3 minutes. Then I melted the gelatin in a little warm tap water and when I thought the jelly was less than 60 degrees, I mixed the gelatin in it.

When the countertop has cooled completely, I cut it in half, filled both countertops with cream cheese, and poured the warm jelly on top with a spoon. But I have cold cakes. The first portions were eaten after about 3 hours, but it is best for this cake to have at least 5-6 hours to sit in the fridge.

What I learned from the Fanta cake and what else can be modified to it:
- First of all, it's delicious! :) I think it's one of the best cakes I've ever eaten.
- then, that it is better to assemble it without the side circle of the cake shape, than with. The jelly stuck to the walls of the metal circle and when I took it out, pieces of jelly broke.
- although I didn't use syrup, my cake came out syrupy, probably from the cut cream and the cheese that had been soft and somehow watery. I think it was an advantage, because the countertop comes out relatively dry.
- whoever wants, can use less sugar. I don't like unsweetened sweets. Either they are sweet and fragrant, or the cat does not eat them either. :)
- the cream cheese must be soft, pasty, if possible, not harsh and dry.
- Fanta can be replaced with natural orange juice, but then it is no longer called Fanta cake: P :)

Otherwise, all good, from last night until today, I still have some leftovers from the edge of the two Fanta cakes (I sliced ​​it classically, in squares, because the edges were unsightly) and 6 cubes kept for my neighbor, who now does not is home, but he made me remember not to forget, so. you will lick your cake with your fingers!

Separate 6 eggs into egg yolk and egg white. From the six egg whites we make cream with 6 tablespoons of sugar, and we mix the 6 egg yolks with 1 dl of oil, 4 tablespoons of flour, 2 tablespoons of cocoa powder and an envelope of baking powder.

Pour the dough into a baking tray, and bake it in the preheated oven at 200 ° C.

Ingredients (8 people)

  • 6 eggs
  • 6 tablespoons sugar
  • 1 dl of oil
  • 4 tablespoons flour
  • 2 tablespoons cocoa powder
  • 1 sachet of baking powder

Cheese cream

Mix 1 kg of Kézdi cow's cheese with 2 packets of Kézdi butter at room temperature, add sugar to taste, and grease it on the cold dough.

Mix the gelatin with 5 tablespoons of water and leave for 10 minutes.

Mix the sweet cheese with 150 g of sugar, 1 sachet of vanilla sugar, peel and lemon juice.

Heat the gelatin on a bain-marie until completely dissolved and add it over the sweet cheese.
