Goat Cheese Croquettes with Spiced Membrillo

Ingredients

Spiced Membrillo

  • 8 ounces membrillo (quince paste)
  • 2 tablespoons sherry vinegar
  • 1 tablespoon Aleppo-style pepper
  • 1 teaspoon fresh lemon juice

Croquettes

  • 1 cup all-purpose flour, plus more for hands
  • 8 ounces chilled fresh goat cheese
  • 1½ cups panko (Japanese breadcrumbs)
  • Vegetable oil (for frying; about 6 cups)

Recipe Preparation

Spiced Membrillo

  • Pulse membrillo, vinegar, Aleppo-style pepper, and lemon juice in a food processor until smooth. Transfer to a small bowl.

  • Do Ahead: Spiced membrillo can be made 1 day ahead. Cover and chill.

Croquettes

  • Using floured hands, form a heaping tablespoonful of goat cheese into a 1½"-long log. Transfer to a parchment-lined baking sheet. Repeat with remaining cheese to make 15 more logs. Chill until firm, about 20 minutes.

  • Pulse panko in a food processor until very finely ground; transfer to a shallow bowl. Whisk eggs and 1 Tbsp. cold water in a second shallow bowl. Place remaining 1 cup flour in a third shallow bowl. Dredge a log of goat cheese in flour, shaking off excess. Dip in egg mixture, letting excess drip back into bowl, then coat in panko, pressing to adhere. Repeat process to create a second coating. Transfer to a baking sheet. Repeat with remaining logs of goat cheese. Chill croquettes in freezer until firm but not frozen solid, about 15 minutes.

  • Pour oil into a large heavy pot to come 2" up sides. Fit pot with thermometer and heat oil over medium-high until thermometer registers 350°. Working in several batches to avoid crowding the pan, fry croquettes, turning occasionally, until golden and crisp, about 2 minutes. Transfer to paper towels to drain; season with salt.

  • Serve croquettes with spiced membrillo.

Sugarcane Raw Bar Grill – One of Miami’s Best Restaurants

Sugarcane Raw Bar Grill exceeds expectations with its globally inspired and insanely scrumptious fare. Executive chef Timon Balloo is focused on the “shared experience” while dining and that is what you will get along with a chorus of intense foodgasms. He accomplishes this aura with shareable small plates and hardy large plate fares, such as the crave-worthy comfort food dish of whole roasted chicken with truffle fingerling potatoes and wild mushrooms.

Winning numerous awards and recognition, I was excited to be dining there. Sugarcane received an ecstatic review from Zagat and Food & Wine. It won “best new restaurant” award from Miami New Times, “best restaurant” from Johnson & Wales, a AAA 4-Diamond rating, and a Miami Herald 3-star review, twice. But if you know anything about the fine dining world, nothing is more coveted than the James Beard award and Sugarcane was a semi-finalist in the Best New Restaurant category.

Back in 2010, midtown Miami was in its infancy and Sugarcane’s gastronomic sensibility started the foodie scene. It’s mantra, kick back, eat well, and stay awhile. Let’s not forget Sugarcane found fame with its lite healthy fares. And I wanted to give a shout to excellent service by our kind and attentive waiter, Chris. Now the moment you all been waiting for, onto the food…

Starting us off, Chris, brought us the Crudo Hokkaido Scallops over top compressed apple and topped with a peck of black truffle, lime juice and a sliver of jalapeño ($14). The smoothness of the scallop melds well with the crispy crunch of the apple underneath. I highlight this dish, even if you’re not a fan of raw fish texture, because you can’t even tell. And if you are a fan, this dish is just a delight.

Sugarcane has wonderful options if you are looking for a light and healthy experience. Besides the deep list of crudos there is sashimi, salads and grilled meat options to keep our Miami Winter bods in check.

Next came the exquisite Carrot Soup ($10). A complex, multi layered soup composed of red curry, coconut milk, almonds and chili oil, I would call it a “healthy” dessert like soup. A creamy, delicious blend melts in you mouth with crushed peanuts delivering a crunchy added texture. I highly recommend this gorgeous dish.

A trifecta of breakfast and a real brunch meal came with the Duck & Waffle, crispy leg confit, duck fried egg on top of a Belgium waffle, with mustard maple ($19). The duck, egg, waffle and syrup worked in tandem to create some happy dances at the table.

One of two very popular choices at Sugarcane Miami is the Goat Cheese Croquettes with Membrillo Marmalade ($9) is a twist on the classic Miami snack. The other is the vaunted Bacon Wrapped Dates with Linguica and Manchego ($13). Anything wrapped in bacon is stellar and these date balls takes cuisine to a new level. Probably the best bite we had all day and in Miami in a very long time. Inside the date is a sausage and cheese pâté and paired with a watercress salad with fennel and light mustard dressing. These balls will elevate your palate!

Another superb pick is the Foie Gras Fried Rice with shredded duck, coriander, recap manis ($23). The Foie gras was encapsulated in its own fine crisp shell and blends prolifically with the rice, duck and egg. The rice merits Asian accolades with its deep spices and a hint of sweet soy sauce.

We just had to try the Canvas special, which for February is a Florida Snapper, galangal & jalapeño curry ($18). A flavorful spiced meal served over yellow rice and enough to feed the whole table. The Canvas special is their new charitable initiative. Each month a guest chef is invited to create a unique inspiring dish using a bowl as a “blank canvas.” A portion of the proceeds from each order of this dish is donated to No Kids Hungry to spread awareness for and help fight childhood hunger in America. February’s featured guest chef is Clay Conley.

Finally, even with full stomachs, dessert(s) could not be passed up. We ordered two desserts. The first was Torrejas with maple caramelized apples ($10). A version of french toast, topped with baked apples, smothered with cinnamon maple butter and served with cinnamon ice cream on top of graham cracker crumbs. Another Sugarcane Miami winner.

Second, was the Coquito Crème Brûlée with passion fruit curd, and coconut-sesame crisp ($10). My french favorite dessert. The creamy sweet brûlée cream is like a water underneath frozen pond, a crystal sheet of sugar glass glazed on top. And on top of that like ice skaters are a dollop of passion fruit curds and their hockey puck coconut crisps. Get a spoonful of all three in one bite and your taste buds will feel woken up like a breath of chilly fresh air on hitting your face.

Sugarcane Miami is beyond splendid. The cuisine was flawless, the prices are affordable, the ambiance is inviting and the waitstaff is on point. We did not even have a chance to delve into their very impressive cocktail menu, but it is unique, reasonable and so enticing. Miami has really emerged as a fantastic dining destination and we feel that Sugarcane Raw Bar and Grill is definitely one of the best Miami has to offer.


The cuisine of Northern Mexico

Durango’s cuisine is characterized by the use of all kinds of meats as the main ingredients in such dishes as caldillo, which is made with dry meat and red chiles, and red pipian or patoles durangueños, made with white beans and pork. You can accompany your meal with a glass of wine or mezcal. Other local favorites include the famous Mennonite cheeses, pan con jalea (bread with a jelly spread) and cajeta de membrillo (quince sweets).

In Hermosillo you can enjoy some of the best cuisine in the state of Sonora, including fish and seafood dishes like caldo largo and sopa de mariscos (fish and seafood soups), pescado zarandeado (grilled fish prepared with various seasonings), bass stuffed with seafood, caguamanta soup prepared with manta ray fillets, and the traditional mochomos (fried shredded beef or veal served with flour tortillas). For dessert you can indulge in the famous coyotas, tasty flour tortillas made with brown sugar.

In Monterrey you can try exquisite meat dishes, such as the famous cabrito, young goat that is roasted or cooked in its juices. Other popular dishes include carne zaraza (braised kid) and dried meat known as machaca, which is generally prepared with scrambled eggs. All of these dishes come accompanied with beans, flour tortillas and spicy salsas known as pico de gallo, la bandera and la fresadilla. The regional beverage of preference is beer. As for dessert, don’t forget to indulge in the traditional glorias, sweets prepared with goat’s milk and nuts, as well as the fruit preserves and besitos de leche (milk-candy kisses).

Coahuila has a wide variety of dishes that contribute to Coahuila’s rich culinary offering. Among Coahuila’s specialties are meat dishes, such as choice cuts, pork rinds and dried meats. You also can try gorditas de carnero (mutton gorditas), fritadas (choice cuts of fried beef or young goat, accompanied with flour tortillas). Another tasty regional treat is pan de pulque, bread made of flour, eggs, sugar and pulque (a fermented alcoholic beverage extracted from the maguey plant). In addition, you can indulge in fruit liqueurs and walnut empanadas. For dessert, the city offers fruit rolls, pine nut pudding and glorias, made with goat’s milk, walnuts and vanilla extract.

In Tampico you can try a wide variety of dishes made mostly of fish and seafood ingredients. Among the local favorites are jaiba rellena de huitlacoche or flor de calabaza (crab stuffed with Mexican corn truffle or squash blossom), robalo en escabeche, empapelado or chimichurri (bass prepared in a vinegar-based marinade, wrapped in foil, or prepared in a chimichurri sauce), pulpos enchilados (spiced octopus), empanadas de camaron (shrimp turnovers), seafood and rice dishes and grilled prawns. You also can enjoy a delicious regional meat dish, known as carne a la tampiqueña, which is prepared with aged cheese or served with beans and black mole enchiladas with tamarind.

Torreon has a wide variety of dishes that make up part of Coahuila’s rich culinary offering. Meat dishes, such as beef, veal and young goat, are among the most popular dishes. Only the finest cuts of meat are used in the preparation of fritadas (croquettes), which come accompanied with flour tortillas. Also worth noting are the pork and sweet tamales, migas norteñas (a northern-style egg dish with salsa), and pan de pulque (bread which consists of flour, egg, sugar and a fermented beverage called pulque). To accompany your meal, nothing beats an excellent wine from the Parras de la Fuente vineyard or an exquisite brandy as an aperitif. As for desserts, you can indulge in queso de piñon (a pine nut custard), cajeta de membrillo (quince candy), dulce de leche con nuez (regional milk candy with walnuts), or apple and pear liqueurs.

The cuisine of Zacatecas is known for its variety and rich flavors. Among the typical dishes you can try are asado de boda (literally wedding barbeque), which is called that because it is commonly served at weddings. It is prepared with small pieces of pork loin and a red ancho chili sauce fried in lard. This dish is often accompanied with Huitzila mezcal, a typical alcoholic beverage from Zacatecas. You can also wash it down with aguamiel (honey water) or tenampa. Other dishes that will please even the most demanding palate are birria de chivo (stewed goat), red pozole, enchiladas, carne adobada (marinated meat) and stuffed gorditas. Popular regional desserts include cocadas (coconut sweets), melcochas (a marshmallow treat), ates de guayaba and membrillo (candied fruits), jamoncillo de leche (a type of milk fudge) and queso de tuna (a sweet made from dried prickly pear).

Spain produces scores of fascinating cheeses, but ask Americans to name their favorite, and the answer will surely be Queso Manchego. The U.S. is one of the world's largest consumers of this Spanish classic, importing almost 4 million pounds last year, according to the U.S. Department of Commerce.

Nutty with a balanced blend of saltiness and lactic tang, neither too pungent nor too bland, this sturdy sheep's milk cheese is easy to like and easy to find in supermarkets, gourmet shops and restaurants.

As its name indicates, Manchego comes from La Mancha, a high plateau in central Spain. Protected by a Denomination of Origin, the name Manchego can be given only to cheeses made from the milk of Manchega sheep in municipalities belonging to the provinces of Albacete, Ciudad Real, Cuenca and Toledo and ripened at least 60 days.

To be sure you are buying the real thing, search for a numbered commercial seal of approval from the Consejo Regulador de la Denominacion de Origin Queso Manchego and a commercial label stating the cheese is made with Manchega sheep milk.

A young Manchego with a minimum of 60 days ripening is labeled fresco. A cheese of about six months is a semi-curado (semi-cured), and one aged from six months to one year is a curado (cured). A cheese aged for more than 16 months is an añejo (aged), and, like a well-structured wine, is usually the most complex, with a drier texture and a more emphatic brininess and pungency.

. A good source of artisanal Manchego, made with unpasteurized milk for a more pronounced flavor, is La Tienda tienda.com(, 800-710-4304), which sells a 14-month-old reserva for $13 a pound plus shipping.

At any age, Manchego is a pleaser. When young or semi-cured, it is terrific in sandwiches and in the filling of croquettes. A more piquant aged Manchego comes close in pungency to a good Parmigiano Reggiano and it is delicious by itself as a tapa with some crusty bread.

At Cucharamama, I top our serrano ham pizzas and flat breads with a mixture of aged Manchego and Parmigiano Reggiano spiced with ground Andean peppers. There is no more luxurious seasoning for bread.

ARTISANAL CHRISTMAS COOKIES FROM ANDALUSIA

It took me a long time to get to like Spanish Christmas sweets—the ring cookies heavily flavored with aniseed, fried pastries filled with a sort of pumpkin jam and tiny lard cakes that crumbled into bits in the hand. They were all so different from the buttery, icing-topped cookies I knew growing up in Midwest America.

When I began collecting recipes, I joined village women in their kitchens to make many of these beloved holiday cookies and pastries. Gradually, I came to love them.

Mantecados are melt-in-the mouth cookies made with lard, almonds, cinnamon and sesame.

Nowadays, in my village, a few women still make homemade sweets. But, more and more, these are produced industrially. The town of Estepa in the province of Sevilla is renowned for its mantecados, cinnamon lard cookies, which are said to have originated in the 16th century in the Santa Clara convent.

Mantecados are the first in the trinity of Andalusian Christmas cookies—the other two are polverones, “powder” cookies, and roscos de vino, tiny, wine-scented doughnuts. Polvorones are made with virtually the same lard dough as mantecados. After baking, they are dusted heavily with powdered sugar to “powder” them.

The winter hog-butchering season coincides with the Christmas holidays. After the hams are salted and the sausages hung to cure, pork fat is rendered to make pure, white lard. Lard makes melt-in-the mouth cookies. Mantecados also are made with olive oil. However, butter or other shortening is definitely not a substitute. (Yes, I know that so-called "Mexican wedding cookies," with butter, were originally Andalusian mantecados and polvorones.)

I call my homemade cookies “artisanal” because I bought a hunk of ibérico pork fat, rendered and strained it to make pure lard. I picked the almonds, cracked them, blanched and skinned them, toasted them in the oven, then ground them to meal.

Do not use packaged lard for these cookies, as it is a hydrogenated product. Either render your own or find a butcher who makes it. You will need about 1 ½ pounds of pork fat to make 2 cups of lard. Chop the fat and heat it gently until melted. Strain. Cool and refrigerate, covered. The rendered fat solidifies and turns white as it cools.

In both of these recipes, the flour is lightly toasted before mixing. If you are making both cookies, prepare enough flour for them both in one go. This can be done a day or more in advance. Stir the flour every 5 minutes while toasting to avoid scorching it. It should be a pale gold in color. Let it cool completely, then sift the flour.

You can make these cookies bigger or thicker than I specify in the recipes. But, remember, that will change both the baking time and the yield.

The cookies keep well in a cool place. They stay firmer if kept refrigerated.

Let the baked cookies cool 10 minutes on the baking sheet before lifting them with a spatula, otherwise they will crumble.

2 ¼ cups all-purpose flour
1 cup ground almonds
2 teaspoons cinnamon
Pinch of salt
1 cup lard
1 cup confectioners’ sugar, sifted
1 tablespoon sesame seed

Preheat oven to 350º. Place the flour on a rimmed baking sheet and almonds on a shallow oven pan. Toast them in the oven, stirring every 5 minutes, until flour and almonds are lightly colored. The flour will be pale gold, not brown, in about 15 minutes. Ground almonds need only about 4 minutes.

Cool the flour and almonds completely. Sift the flour with cinnamon and salt.

Place the lard in a mixing bowl and, on medium speed, cream it until fluffy. Gradually add the confectioners’ sugar. Stir in the toasted flour, then the almonds.

Turn the dough out onto a board or marble work surface. Combine the dough by kneading it with a few squeezes. Gather it together in a ball and chill it for at least 1 hour or up to 24 hours.

Divide the dough in half. Keep one half refrigerated. Roll the other half out on an unfloured surface to a thickness of ¾ inch. Sprinkle some of the sesame seeds on top of the dough. With the rolling pin, press them into the surface of the dough.

Use a 2-inch biscuit cutter to cut rounds of the dough. Transfer them to a baking sheet lined with oven parchment. (Use a knife or offset spatula to lift them from the board.) Gather remaining dough, roll out and cut again.

Repeat rolling and cutting with the remaining half of dough.

Bake the cookies for 20 to 25 minutes until they are lightly golden on top. Let them cool on baking sheet for 10 minutes. Use a spatula to lift them onto a rack to cool.

Once the cookies are cool, wrap each cookie individually in 7-inch squares of tissue paper, twisting the ends to enclose.
