I prepared Dorada for a dinner on Saturday night, when the children went to my grandmother's, and my husband and I decided to eat something tasty, but not to keep me too long in the kitchen (only 30 minutes). I chose 2 sweet purple potatoes and blanched broccoli as a garnish and I completed the dinner with a glass of white Feteasca. It was the perfect dinner!

Ingredient:
2 goldfish

Marinade:

8 tablespoons lemon juice
4 tablespoons olive oil
3 teaspoons sea salt
4 cloves of freshly crushed garlic
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried / fresh rosemary
1/2 teaspoon ground ginger

Training:

This is how things are with the release, but not as some parishioners would think that, after eating saturated meat today, tomorrow we are taking the fishery by storm because fish is being eaten and we must not harm the holy ones. Only once, a few years ago, did I manage to fast and since then, from this point of view, I am a sinner who did not have the honor of receiving release from fish. I ate fish like a sinner who did not bind, but who did not even mimic the release in the hope that perhaps I would pass to the Holy Father. Today I prepared fish in the oven, respectively a mullet with tomatoes flavored with & # 8230.

Don't make salmon bread because the meat is too greasy. I'm not saying, any raptor like pike, pike or sturgeon (blind, trout, sturgeon, cod) would work, but they deserve to be highlighted by other more elaborate recipes. We don't make them bread!

I bought frozen Alaska cod fillets, ready portioned (400 g). A bit full of water & # 8230 I saw how much juice they left under the strainer (I was left with less than 300 g after the drain). Fill the inside with slices of lemon, rosemary, thyme, sage, basil, dill, parsley, oregano, coriander and tarragon. If you don't have all these herbs, put what you want, it's absolutely no problem. Tie it well with a special string for cooking and season it well with salt on the outside.

Put the cherry tomatoes next to it, the leeks, the kapia peppers and the rest of the garlic. Sprinkle them with a little olive oil.

Put the tray in the preheated oven at 180 degrees. Turn the vegetables over and take them out one by one depending on how fast they cooked. Cover the bowl with plastic wrap and leave them there for about 10 minutes, until there is little condensation, enough to peel the vegetables very easily. Put them in a blender, add basil, sugar, salt, pepper, and a little olive oil and blend everything. Check the fish and when it is almost ready, sprinkle it with white wine. Take it out after 55 minutes. The time may differ depending on its size.

Serve with baked vegetable sauce and a few generous slices of toasted peasant bread!


Tuna recipe in the oven

If you want to take your heart in your teeth and prepare a whole tone in the oven, we advise you to choose a recipe for red tuna in the oven or a black tone, which will be very delicious and juicy when cooked. Here is a recipe for whole tuna in the oven that is only good to try!

Ingredients for 3-4 servings:

  • a ton & icircntreg
  • 4 cloves of garlic
  • a lemon and an orange
  • 4 tablespoons freshly squeezed lemon juice & acircie
  • 5 tablespoons olive oil
  • a teaspoon of Tabasco sauce
  • 2 teaspoons of crushed coriander seeds
  • 2 tablespoons freshly chopped coriander or parsley
  • a few cherry tomatoes
  • salt and pepper to taste.

How to prepare the whole tuna in the oven:

& Icircncinge the oven to 200 & degC. Cut the orange and slice the slices, and then cut the lemon slices into 1 cm wide slices.

Mix in a bowl the finely chopped garlic with 2 tablespoons of olive oil, 2 tablespoons of lemon juice, the crushed coriander seeds and the Tabasco sauce.

Wash the tone, wipe it with fresh paper towels and cut it about 7-8 times on each face. Place the tuna on a large plate, sprinkle over it the freshly chopped coriander or parsley, along with a few slices of orange and cherry tomatoes.


Ingredients Baked vegetable fish:

  • as many healthy pieces of fish (around 200-250 grams) as you have enough to saturate, I used carp fillets
  • 4 tablespoons oil (I used extra virgin olive oil, but it works for anyone)
  • 1 small onion
  • 2 cloves of garlic
  • 1 red pepper
  • 1-2 carrots
  • celery as small as 1 egg (or 1-2 celery stalks)
  • 400 ml. tomatoes in broth (tomatoes and juice)
  • 200 ml. of white wine
  • 3-4 tablespoons of flour
  • 10 peppercorns
  • 2 bay leaves
  • thyme, ground pepper
  • chopped greens for sprinkling (parsley and thyme, according to preference)

Preparation of fish with vegetables in the oven & # 8211 preparation in the pan

1. The fish pieces are salted and peppered (picture 1) then they are given through flour. Heat 3 tablespoons of oil in a pan and brown the fish on both sides (picture 2). Once browned, remove the fish from the pan and set aside.

2. In the same pan, without washing it, add the rest of the oil. Then add chopped onion, finely chopped celery, crushed garlic and sliced ​​pepper. Stir until they begin to soften, stirring constantly. Add the cleaned and sliced ​​carrots. Add 2-3 tablespoons of wine and simmer the vegetables for 5-6 minutes (picture 3).

3. Take the pan of vegetables off the heat and salt and pepper to taste.
Place all the vegetables in a deep tray, suitable for the oven and of dimensions appropriate to the amount of fish to be prepared. Place the fish pieces on top. Pour the tomato juice and finely chop the tomatoes and spread over the fish. Pour the rest of the wine into the tray.4. Add the peppercorns (I put red pepper, it is very fragrant without being hot), the bay leaves broken into pieces and a few sprigs of thyme.5. Cover the tray very well (with the lid or with aluminum foil) and put it in the preheated oven at 190 ° C for 45 minutes. After this time, remove the lid and leave in the oven until the dish is browned on top.

Serve fish with baked vegetables

Serve the fish hot, sprinkled with chopped greens, along with a portion of vegetables from the pan, with polenta or natural potatoes (or what garnish everyone likes). Optionally, it can be sprinkled with garlic sauce (my choice was to do it).More baked fish recipes.

Salmon, cooked in the oven with greens, is one of my favorite dishes.

I prepare several kinds of fish, identical to this salmon recipe. In conclusion, you can use the recipe for your favorite fish. )

QUINTESSENCE:

  • salmon (file / medallion) - 1 kg
  • olive oil - 100 ml
  • fresh oregano - 2-3 threads
  • fresh tarragon - 2-3 threads
  • fresh dill - 2-3 threads
  • fresh rosemary - 2-3 threads
  • coriander / fresh parsley - 2-3 threads
  • lemon - 2 pcs
  • white pepper - a teaspoon
  • salt

ALCHEMY:

Clean the salmon of scales if necessary, cut according to preference, if you do not buy already cut or medallions.

Wash the greens and wipe with a clean towel. Or leave them until the water drains from them and dries. After drying, remove the leaves from the stem and the stems will be discarded.

Then add over the salmon the olive oil, the lemon juice, the salt, the white pepper and the green leaves and mix carefully so that the salmon pieces do not break. It is necessary to mix, because salmon must "steal" the aroma of green leaves.

Then leave in the fridge for marinating for 2 hours. After that, arrange the salmon pieces in the oven tray or in a heat-resistant dish and cover with aluminum foil. Place the tray in the hot oven at 180 ° C for about 15 minutes, then remove, remove the aluminum foil and place in the oven for another 10-15 minutes to brown the salmon.

Salmon can be served with rice garnish, baked potatoes or sauteed vegetables, grilled or baked.


4 medium-sized sea bream
8 lamai
6 tablespoons brown sugar
5 tablespoons olive oil
salt pepper
coriander seeds

Wash the fish, raise it and place it in the tray, grate the lemons (6) and put the grater in a bowl where you add the sugar, lemon juice, salt, pepper and coriander seeds and oil.

Mix until a creamy composition is obtained.

Put this composition over the fish in the pan, leave it in the fridge for half an hour, then put the tray in the oven where it is left for about 30 minutes on low-medium heat, occasionally putting sauce over the fish.
