Swedish Potato Salad Recipe of 17-09-2007 [Updated on 27-08-2018]
I ate this potato salad during my stay in Liguria, my aunt prepared it one evening, which blends Neapolitan / Italian / Ligurian cuisine with Swedish cuisine.
You say that in northern European countries there is no "classic potato salad" as we understand it, with vegetables and tuna, but it is usually prepared with sauces, spices and ingredients such as dried tomatoes or pickled gherkins. This is one of the potato salad recipes they make in Sweden, really very tasty;)
How to make Swedish potato salad
Boil the potatoes for about 30 minutes (check the cooking with a fork).
Let the potatoes cool, peel them and cut them into cubes.
Cut the onion, cherry tomatoes and dried tomatoes into small pieces and place them in a bowl.
Add the diced potatoes.
Mix everything well.
In a bowl, prepare a sauce with mustard, mayonnaise, oil, salt and pepper.
Mix well and add the sauce to the potato salad and mix gently to make everything bind well.
Put the potato salad in the fridge for 1 hour before serving.
