When I read about the zucchini flatbread on the Cookaround cooking forum, I was immediately intrigued and tonight I decided to try it with some variations ... the result was perfect, the zucchini flatbread was crunchy on the outside and soft on the inside, certainly to be proposed again at the next dinner :)
How to make zucchini flatbread
Wash and peel the courgettes, then cut them into thin slices.
Mix the flour, Parmesan, salt and pepper in a bowl.
Add the water, the oil and mix until you get a fluid batter.
Add the courgettes cut into rings and mix.
Pour the mixture into a baking sheet lined with parchment paper, leveling the courgettes in such a way as to distribute them evenly, then cover with a drizzle of oil.
Bake the zucchini flatbread in a preheated oven at 180 ° C and cook for 40 minutes.
Let it cool, cut it into squares and serve lukewarm.
