How to make salty Baci di dama
Chop the almonds until you get a flour.
Add the diced butter, flour, parmesan, pecorino cheese and water to the almonds.
Knead well until you get a homogeneous mixture.
Take some pieces of dough and form about 40 balls.
Place on a baking sheet lined with parchment paper and bake in a hot oven at 180 ° C for about 15-20 minutes.
In a bowl, mix the fresh cheese with the salt.
Take a ball and stuff it with the cream cheese.
Close with another ball, then sprinkle some chopped pistachios on the side of the cheese.
Keep the salted lady's kisses in the fridge until ready to serve them.
