These are very simple shortbread cookies decorated with icing, marshmallows and sugars to simulate a snowman that is starting to melt, a very nice idea that the children of the house will love. In case you have a lazy half day and are looking for a way to distract your little ones, this could be a nice and greedy idea to entertain them;)
How to make snowman cookies
First prepare the shortcrust pastry (half a dose should be enough if you use my recipe), cover with cling film and let it rest in the refrigerator for at least 30 minutes.
Take the dough and roll it out on a lightly floured work surface into a sheet of about 1 centimeter.
With a 7 cm pastry cutter, make the biscuits, arrange them a little apart on the baking sheet lined with parchment paper and bake for about 20 minutes in a preheated convection oven at 180 ° C.
Once well cooked and golden, take the cookies out of the oven and let them cool.
Meanwhile, prepare the royal icing by mixing egg white, icing sugar and a few drops of lemon juice.
At this point you can start decorating your cookies.
Pour a little icing on each biscuit (it must not be too homogeneous, because it serves to simulate melted snow).
Add a marshmellow (press a little to stick it well with the cookie icing) that will be the snowman's head, then add the other elements of the snowman: chocolate chips for the eyes, orange sprinkles for the nose, smarties for the buttons. , bits of licorice for arms and hands.
Let it harden at room temperature for about 1 hour.
The snowman cookies are ready.
