Tortano thermomix recipe by of 17-03-2015 [Updated on 04-09-2018]
With this recipe, you can prepare tortano with the Thermomix. Together with the casatiello, from which it differs for the eggs that are hard-boiled and chopped into the dough instead of whole and raw on top of the dough, the tortano is a Neapolitan rustic typical of the Easter period. Like all more traditional recipes, every family has its own version and this is mine, the one handed down by my grandmother, passed through my mother and arrived in my hands.
How to make tortano with the thermomix
Put the water and yeast in the mixing bowl and knead for 1 min. at 37 °, vel. 1.
Add half the flour and knead for 3 min. at speed Ear.
Add the remaining flour, lard, salt, 3/4 of the pecorino and a handful of pepper, and knead for another 6 min. at vel Spiga.
Remove the dough from the bowl and let it rise for at least 1 hour.
Meanwhile, cut cold cuts and cheeses into cubes. Prepare the hard-boiled eggs, let them cool, shell them and cut these into cubes too.
Take the dough and roll it out. Arrange the cold cuts, cheeses, eggs and the remaining pecorino on top, then roll the dough around the filling.
Grease the mold with plenty of lard, arrange the roll on it creating a donut and joining the ends well.
Grease the tortano with more lard and let it rise for the whole night, or for at least 2 hours.
Bake in a preheated oven at 160 ° C for about 1 hour.
Let it cool, then cut into slices and serve.
