The almond chicken is a classic second course of Chinese cuisine. Quick and simple to make, chicken with almonds is one of the Asian dishes that is most appreciated in Italy and that during the ethnic dinners that I organize at home is never missing together with spring rolls and chicken with honey;) The typical ingredients which characterize the dish are soy sauce, ginger and almonds of course. The cooking of chicken usually takes place in the wok, which allows the meat to be cooked without adding too much fat and giving a homogeneous cooking. The result, with this recipe is the same as the version I usually order at Chinese restaurant and when I bring it to the table, it makes everyone happy.
How to make almond chicken
Cut the chicken breasts into cubes and pass them in the cornstarch.
Put a tablespoon of seed oil in a non-stick pan and toast the sliced almonds, then lift them and set them aside.
In the same pan, heat 4 tablespoons of seed oil and sauté the spring onion, together with the grated ginger.
As soon as the onion is golden brown, add the chicken nuggets and cook them over medium heat for about 15 minutes.
A few minutes before the end of cooking, add the toasted almonds and the soy sauce, lower the heat and mix the ingredients gently.
Serve the chicken with almonds accompanied, if you prefer, by basmati rice.
