Mango and prawn salad recipe of 21-08-2016 [Updated on 21-12-2017]
The mango and shrimp salad is perfect if you want to propose a fresh, light and original dish. I loved this salad both for its visual appearance and for the flavor that fully meets my tastes. The spelled grains are combined with the delicate flavor of the prawns and the fruity taste of the mango, complete the whole spicy of the rocket and the dressing made also with orange juice. How to make mango and shrimp salad
First of all, cook the spelled in a pot with plenty of salted water, follow the cooking times shown on the package (in my case 15 minutes), drain it and let it cool.
Meanwhile, steam the shrimp for about 5 minutes, then peel and set aside.
Wash the rocket and fennel and cut the latter into slices.
Wash the mango well, cut off the cap from one long side and empty it trying to leave the peel intact so that you can serve the salad in a rather spectacular way.

Combine all the ingredients in a bowl: spelled, mango, shrimp, fennel and rocket.
Season with salt, pepper, oil and orange juice.
Stir and let it rest in the fridge for 30 minutes, then serve the spelled salad in the empty mango shell.
