The pistachio roll it is a truly irresistible dessert with an enveloping and refined flavor. It is a biscuit dough flavored with pistachio and then stuffed with a delicious cream without eggs and without cooking, very quick to prepare, made simply with mascarpone and pistachio cream. Once decorated with a little icing sugar and chopped pistachios, your dessert will be ready: an original and absolutely delicious dessert with which you can amaze all your guests!
This is the first recipe I made in the new office and it was the dessert I brought up from the guys who work with us to celebrate. My pistachio roll was super appreciated, and I hope it is with you too. Basins and happy Sunday!
How to make the pistachio roll
Separate the yolks from the whites, whip the latter until stiff peaks and set them aside.
In another bowl, wash the yolks with the sugar instead until the mixture is light and fluffy.
Also add the vanilla.
Then add the sifted flour and yeast, pistachio flour, coloring and grated lemon peel.
Mix well, then gently incorporate the egg whites, mixing from bottom to top.
Pour the mixture into a 35x35 mold lined with parchment paper and bake at 175 ° C for about 15 m, in a preheated ventilated oven.
Once ready, remove from the oven immediately, cover with a second sheet of parchment paper, roll up gently and let cool completely.
Meanwhile, prepare the filling.
Work the mascarpone and the pistachio cream in a large bowl until a homogeneous filling is obtained.
Once completely cold, take the biscuit dough, open it gently and sprinkle it evenly with the pistachio and mascarpone cream, leaving 1 or 2 cm free along the edges.
Roll the cookie dough again.
Your pistachio roll is ready: sprinkle with icing sugar, add, if you want, some pistachios or a little chopped pistachios, and serve.
