The crackers, as well as in the classic way, can be prepared with unrefreshed sourdough, that part of yeast that you have left over if you do not intend to make bread. This preparation is not the only one that can come to our aid if we have redundancies, in fact, in addition to crackers you can prepare wraps, breadsticks or tarallini for example, as I try to make them I will put the recipes. How to make crackers with surplus sourdough
Melt the unrefreshed sourdough in a bowl with water at room temperature.
Then add the flour and start kneading.
Add the oil and salt.
Knead until a dough is formed which you will rest covered with a cloth for half an hour.
Now mash the dough and then roll out a sheet of a few mm.
Cut the pastry into rectangles.
Then cut out your crackers, prick the surface and place them on a baking sheet covered with parchment paper then Bake in a preheated oven at 200 degrees and cook for about 12 minutes.
Let cool and serve your carackers with surplus sourdough.
