And now let's start a new section, the one on how to recycle the vegetables from Elisa's broths. Last Sunday, first baby food, first idea ... a sauce of sautéed vegetables with the addition of shrimp tails with which I seasoned the pasta, a really excellent first course. The peculiarity lies in the fact that the vegetables, previously boiled, come apart in the pan forming a creamy sauce that, accompanied by the flavor of the shrimp, becomes a really delicious condiment, try it for yourself :) Obviously this is the first experiment of "recycling" vegetables, but other recipes will follow soon since having to make broth every day I have kilos and kilos of boiled vegetables to dispose of: P good day dear and see you next time
How to make pasta with vegetables and shrimp
Prepare a vegetable broth.
After washing the vegetables, peel the potato and carrot and peel the courgette, cut the vegetables into pieces and break up the lettuce, put in a pan with a liter of cold water, cover with a lid and bring to a boil, then add salt. and oil.
Cook the vegetable broth for about 40 minutes.
Separate the vegetables from the broth (you can freeze the broth and consume it for some other preparation) then cut them into smaller pieces
Brown a clove of garlic and a red pepper in a large pan with the oil, and then add the vegetables.
Sauté the vegetables in a pan for about ten minutes, then add the shrimp tails
Gently mix the seasoning, season with salt and deglaze with the white wine.
Cook the pasta in abundant salted water, drain it al dente and toss it in a pan together with the vegetable and shrimp sauce.
Serve the pasta on the plates and enjoy your meal
