How to make carrot and pumpkin soup
Chop the onion and sauté it in a saucepan with a drizzle of oil.
Clean the pumpkin and carrots by removing the peel and cut everything into small pieces.
Put the vegetables in the saucepan and cover with the boiling vegetable broth
Cover with a lid and cook for about 30 minutes
With an immersion blender, blend the vegetables
Put the carrot and pumpkin soup on plates, season with a drizzle of oil, sprinkle with grated parmesan and serve
