This ham and melon rice salad is a fresh, tasty and colorful dish, definitely perfect for the summer. And if, like me, you use the rind of the emptied cantaloupe to serve it, you will also have a spectacular dish! To prepare this salad, I used basmati rice, a variety that I love and whose characteristic is to have long, thin and fragrant grains. How to make ham and melon rice salad
First of all, cook the rice, drain it al dente and season with a drizzle of oil.
Wash the melon, open it in half and remove the seeds from the center.
Then, with an ice cream spoon, begin to empty it, obtaining many balls, until you leave an empty shell of melon peel.
Put the melon balls obtained in a bowl
Then cut the cheese into cubes, cut the ham into strips and wash and chop the rocket, then add them to the rice.
Then add everything to the rice and season with a drizzle of oil. Mix well, then let it rest in the fridge for at least half an hour.
At the last moment, if you want, you can serve the ham and melon rice salad in the empty melon "shell".
