The revani it's a turkish dessert based on semolina that is a little reminiscent of miles, obviously in a more spicy and elaborate version. The preparation is a bit elaborate, but you will see that it is not difficult nor, all in all, that long. Depending on the area, there are different variations of this recipe, whose only constants are semolina and syrup. This one which also includes coconut is the recipe that I chose to prepare myself for the first time and that we loved it, but of course I hope to try other versions of this semolina cake soon;)
How to do the revani
First of all, prepare the syrup: in a saucepan, dissolve the sugar in the water, add the lemon juice, bring to a boil and boil for a couple of minutes, until you get a syrup.
Combine flour, baking powder, semolina, coconut flour, salt and orange peel in a bowl.
Whip the eggs with the sugar, then add the oil and yogurt.
Then add the flour mixture.
Pour the resulting mixture into the mold lined with parchment paper and cook for 30 minutes at 180 ° C.
Remove the cake from the oven, pour the syrup over it and let it absorb it while it cools.
Then cut into squares and decorate with chopped pistachios.
The revani is ready, you just have to serve it and enjoy it.
