Befanini are delicious shortbread biscuits which are usually prepared on the occasion of the Befana. The pastry is enriched with orange peel and rum, it is then cut into the shape of the befana's stocking, the cookies are then covered with colored sugar sprinkles and baked. In the past, the stocking for the little ones was represented by sweets like these, homemade, other than sweets and candies;)
I must say that I have never been very attached to this holiday, after the holidays I prefer to avoid other sweets and with a sock full of chocolates it would be too difficult to keep good resolutions, but a little cookie instead he never refuses, which is why, I always prepare a pan of befanini to celebrate Epiphany.
How to be befanini
In a planetary mixer, work the sugar with the softened butter.
Then add the yolk and go back to work.
Add flour, vanilla essence, grated orange peel, yeast and rum to the dough. Work until you get a homogeneous mixture.
Wrap it in cling film and let it rest for 30 minutes in the fridge.
After this time, resume the dough and roll it out on a lightly floured pastry board.
Cut the cookies into the shape of the Befana's sock with the help of a pastry cutter.
Then transfer them to a baking tray lined with parchment paper and brush them with the egg white. Then cover them with colored sprinkles.
Bake the biscuits at 180 ° C for about 10/15 minutes.
Your befanini are ready to be brought to the table.
