THE salty biscuits as an aperitif they are a variant of the savory biscuits I had prepared some time ago. The particularity of this new recipe consists above all in the very particular shape that allows you to serve them resting on a glass, in order to offer your guests a complete aperitif, consisting of a drink and snacks ... Don't you find them delicious? Making them is very simple and then you can personalize them with the taste you prefer: paprika, seeds, chopped pistachios, almonds and so on and so forth, the more you put.
So I leave you to the recipe of these savory shortbread biscuits and I wish you a sweet day: *
How to make savory aperitif biscuits
In a large bowl, mix together flour, softened butter, pecorino cheese, water, a pinch of salt and white pepper to taste. Continue to work until you get a homogeneous mixture.
Roll out the savory pastry on the floured work surface, creating a not too thin pastry. Cut out the biscuits with a star shape (I used a 5-6 cm one), placing them gradually on the baking sheet covered with parchment paper.
With a knife cut away a piece of pastry from each star, creating a space about double the edge of the glass to use (the cookies in the oven will swell a little and the space will shrink).
Brush the surface of the biscuits with egg white, decorate with poppy seeds, paprika, chopped pistachios or whatever you have chosen for the decoration, then bake in a preheated oven at 170 ° and bake for about 10 minutes or until the edges do not will be golden.
Let them cool completely before touching them, then remove them from the pan, pour your drink into the glasses and complete the aperitif by inserting your savory biscuits on the edges of the glasses.
