How to make fake puff pastry
, too tempting not to try and in fact I immediately got to work. This fake pastry has nothing to envy to the original one and after two tests, a sweet one that you see at the end of the post, and a savory one that I will post to you in the next few days, it was passed with flying colors. I probably should have started with this before getting to make real puff pastry, but in the kitchen there are no rules and the important thing is that I got there so that I can vary the base of my savory pies a little. Put the flour and salt in a bowl, then the cheese and the butter into small pieces.
Mix with a fork until you get a crumbly dough.
Wrap the mixture in cling film and compacting to form a rectangle
Leave to rest in the fridge for 12 hours.
Take back the dough and put it on a floured pastry board, roll it out with a rolling pin to form a rectangle and fold it in three, as is done for the preparation of puff pastry. We refrigerate half an hour.
Resume the operation two more times, three simple laps in all.
At the beginning the dough will appear grainy and uneven, but on the third round it will become uniform.
At this point the fake puff pastry is ready to be used, roll it out into a very thin sheet and use it as you wish.
I cut it into rectangles, I put some honey and chopped almonds
