Fiesta Cake Recipe of 12-05-2014 [Updated on 30-08-2018]
With the Fiesta cake I have reached an almost perfect degree of homemade reproduction of packaged snacks, in fact today I am very proud to post the recipe that I have developed to prepare the Fiesta at home, a real pleasure for the eyes and the palate. Orange and chocolate is a combination that I love and I could not try to make the Fiesta, for convenience I made a single large cake, but if you prefer you can portion everything by dividing into rectangles and then individually glaze each snack with melted chocolate, like i did last time for kinder delice. Friends, I know that Mondays are a bit tough for everyone so I offer you a piece of cake and have a wonderful day, come on!
How to make the fiesta cake
Prepare the base of the cake by whipping the eggs with the sugar, then add the oil and orange juice.
Add the flour, baking powder and finely chopped orange peel.
Whip until a frothy mixture is obtained.
Grease and flour a rectangular mold, then pour the dough inside.
Cook at 170 degrees for 30 minutes.
Remove from the oven, turn over on a surface covered with parchment paper and let cool.
Meanwhile, prepare the orange cream. Heat the milk with an orange peel, then turn off and leave to infuse for 20 minutes.
In a bowl, whip the egg yolks with the sugar, then add the starch and incorporate.
Now pour the filtered milk, add the orange juice and the cointreau. Then put the mixture in a saucepan and cook.
Cook over low heat, stirring with a wooden spoon until the cream has thickened.
Prepare a syrup by dissolving the sugar in a saucepan with the water and orange juice, then add the Cointreau.
Cut the cake into two layers and sprinkle it with the orange syrup obtained.
Stuffed with the cream.
Then cover with the other rectangle of cake. Press lightly on the surface to distribute all the filling well.
Now melt the chocolate and pour over the entire surface of the cake.
With a long blade knife spread the chocolate quickly, completely covering the cake.
Now put the Fiesta cake in the fridge to harden for at least an hour, then take it back, place it on a serving dish and decorate with melted chocolate curves over the entire length of the surface.
Cut into squares and serve.
