In order not to prepare the classic baked chicken with potatoes, the other night I prepared a variant with the addition of a little tomato and porcini mushrooms. The baked chicken was very soft and tasty, thanks to the usual trick of cooking with the pan of water on the bottom and all without adding a drizzle of oil: D
To intersperse the roundup of desserts that I have proposed (and that I still have in store for you), this recipe for baked chicken with potatoes and porcini mushrooms seems perfect to me. How to make baked chicken potatoes and mushrooms
Soften the porcini mushrooms in warm water for about 20 minutes.
In the meantime, peel the potatoes and cut them into chunks and place them in a bowl together with the onion cut into slices, the basil and the chilli.
Rinse and squeeze the porcini mushrooms and add them to the bowl together with the tomato pulp and salt.
Mix everything then pour them into a non-stick ovenproof dish.
Now place the chicken pieces between the seasoning.
Bake in chicken with potatoes at 200 °, placing a pan with water on the base of the oven. Cook the chicken for about 1 hour.
Halfway through cooking, turn the chicken pieces and pour half a glass of red wine over the chicken with the potatoes and mushrooms, then return to the oven to finish cooking.
Remove from the oven and serve your baked chicken with potatoes
