Today's recipe is ... escarole rolls, small morsels stuffed with black olives, capers and mozzarella, a filling that goes well with the taste of escarole, I found them really delicious;) escarole rolls as an appetizer like finger food morsels or as a second course, they can be prepared in advance and then baked just before going to the table. How to make escarole rolls
Clean the escarole, wash the leaves under running water
Boil a pot with water, add salt and dip the escarole leaves
Cook the canned leaves for 1 minute then lift them and drain them on absorbent paper
Fry a clove of garlic in a pan, add the chopped bread, capers, pitted olives and cook for a minute.
Mix well, season with salt and pepper then put everything in a bowl and mix together with the mozzarella cut into small pieces
Stuff the whole escarole leaves with the filling obtained
Roll up the leaves like a roll and place them in an ovenproof dish sprinkled with a drizzle of oil.
Sprinkle the rolls obtained with breadcrumbs, season with a drizzle of oil and bake in a preheated oven at 180 for about 15 minutes.
