Today I return to the Sardinia region (so to speak unfortunately) with the recipe of fregola with sausage. After my first version of fregola with clams here is the one with meat, perfect for those looking for recipes with sausage. Yes, because, for the uninitiated, this very small pasta shape can be combined with fish, meat or vegetable preparations. How to make fregola with sausage
Remove the casing from the sausages and cut them into chunks.
In a large pan put the oil with the chopped onion and brown.
Then add the sausages.
Cook the meat for a few minutes, stirring occasionally, and then add the tomato sauce and salt.
Just wait for it to flavor a couple of minutes, then add the fregola and mix.
At this point cover with the hot broth, put the chopped parsley and cook according to the times shown on the package.
Shortly before finishing cooking, add the pecorino and stir.
Your fregola with sausage is ready to be brought to the table.
