Recipe Pepper and Potato Meatballs from of 14-07-2020
The meatballs with peppers and potatoes they are my latest experiment with meatballs: I had already tried the chili peppers and potato and zucchini meatballs, but in fact, peppers and potatoes are a new entry for me, despite not being a new combination. The result is a really tasty second course, I would even say different from the usual one, but which I'm sure everyone will like. If you want you can add a small cube of smoked cheese or other cheese in the center to make them even more delicious, but in my opinion they are already good as well;)
How to make peppers and potatoes meatballs
First put the potatoes in a pot full of cold water and cook for about 40 minutes or until they are well cooked, then drain, peel them, mash them with a fork and let them cool.
In the meantime that the potatoes are cooking, wash the peppers, peel them, cut them into strips and then into small pieces, then brown them in a non-stick pan with garlic and oil, season with salt and cook for about 10-15 minutes or until they are very soft. .
Let the peppers cool too.
At this point, when the potatoes and peppers are both lukewarm, add them in a bowl together with cheese and coarsely chopped olives, then lightly salt and mix until you get a homogeneous and compact mixture.
With slightly moist hands, form the meatballs, then pass them first in the flour, then in the lightly beaten egg and finally in the breadcrumbs.
Heat some seed oil in a pan and fry the meatballs, browning them well on all sides.
As they are ready, drain the meatballs on kitchen paper.
(Alternatively, cook them for about 20 minutes at 190 ° C in a preheated convection oven.)
The meatballs of peppers and potatoes are ready, serve hot or at most lukewarm.
