Broccoli and quinoa meatballs recipe of 20-02-2015 [Updated on 13-05-2015]
Meatballs with broccoli and quinoa are a vegetarian and tasty main course, with the same dough I tried to make both a meatloaf cooked in the oven and some fried meatballs in a pan and they liked them both ways. I also added pine nuts to the dough and the meatball shape was also to entice Elisa to taste it, but in reality there was no need for any tricks, she also really liked the new dish I proposed to her and so I made a single dinner for all three;) Well friends, I'll leave you with today's recipe and I'm going to pick up the baby from school, see you later.
How to make broccoli and quinoa meatloaf
Clean the broccoli, divide them into florets and steam for 10 minutes
Rinse the quinoa very well under running water, thus eliminating the traces of saponins present on its grains, then cook it in boiling salted water for 15 minutes
Now put the broccoli in opadella with a clove of garlic, a chilli and oil, add salt and cook for a couple of minutes
Lift the garlic, mash the broccoli with a fork, then drain the quinoa and add it to the pan
Stir to mix everything and let it cool
Toast the pine nuts in a pan
Add the egg, Parmesan, toasted pine nuts to the broccoli mixture.
Knead until you get a homogeneous mixture
Form the meatballs and pass them in the corn flour
Alternatively, make a single meatloaf and pass it too in the corn flour
Cook the meatloaf in the oven at 180 degrees for 30 minutes. For meatballs, on the other hand, you can opt for cooking in the oven for 20 minutes or frying in a pan
Serve the quinoa, broccoli and pine nuts meatballs
