Method

How to make donuts with the thermomix

Prepare the leavening.
Put the water, yeast and flour in the jug and work for 1 min. at speed 5 and then 1 min. Ear.
Put in a bowl, cover with cling film and let it rest for 1 hour in the off oven.

Prepare the dough.
Put the sugar and lemon peel in the jug and chop for 30 sec., Vel. Turbo.
Add the flour, eggs, butter, and work for 30 sec., Speed. 4.
start adding the milk with the blades in motion, working for 1 min., speed. 2.
Finally add the leavening and work for at least 10 min., Vel. Ear.
Put in a bowl, cover with cling film and let rise, always in the oven off, for 2 hours or until doubled.

Roll out the dough with a rolling pin into a nice high sheet, about 2 cm.
Cut out some discs with an 8 cm pastry cutter, and arrange them on a baking sheet covered with lightly floured parchment paper.
Cover with a little cling film and leave to rise for 1 hour.

Meanwhile, start preparing the cream.
In a clean jug, pulverize the lemon peel and sugar for 30 sec., Speed. Turbo.
Add the egg yolks and mix for 30 sec., Vel. 4.
Add the flour and work for 30 sec., Speed. 3
Add the milk and vanilla seeds and cook for 6 min. at 90 °, speed 3, then check the consistency and if necessary cook again for 1 min.
Set aside and let cool.

Heat the oil in a saucepan and fry the donuts one at a time, turning them to brown evenly.
Drain with a slotted spoon, placing them gradually on parchment paper, then pass them immediately in the sugar.
Fill them with the custard put in a pastry bag with a long spout.
Serve immediately.
