How to make eggplant rolls
Cut the aubergines lengthwise into slices about 3 mm thick.
Grill them on a plate on both sides.
Prepare a fresh tomato sauce and cut the scamorza cheese into slices
Spread a little tomato sauce, a slice of scamorza cheese, and a basil leaf on the grilled aubergine. Leaving the end of the eggplant free to be able to roll it up easily.
Roll up the aubergine as a roll and stop it with toothpicks.
Place the eggplant rolls in an ovenproof dish with a drizzle of oil on the base and on the surface. Bake at 180 ° C in a preheated oven and bake for about 10 minutes.
