L'Cracco-style egg it is perhaps one of the most famous recipes of the friendly chef. According to him, eggs are often mistreated as they are considered almost a makeshift ingredient, while they are extremely valid and versatile and should rather be valued more. This recipe is certainly one of those that best enhance and even ennoble the egg, specifically the yolk. The recipe is not very elaborate, so much so that the times, apart from the rest in the freezer, are very short. The result, however, is truly remarkable, with a super crunchy breadcrumb crust that contains the still liquid yolk, raising everything to another level, try it!
How to make egg Cracco
First of all, put an even layer (at least half a cm high) of breadcrumbs on the bottom of a container, create 2 conchette and gently place the yolks inside, taking care not to break them.
Then cover entirely with plenty of breadcrumbs, then place in the freezer for at least 2 hours.
After 2 hours, take the container back, always lift the egg yolks very gently (one at a time) with a perforated spoon and fry them in already hot oil until golden brown (if you have a thermometer, heat the oil to 180 ° C and cook for about 60-75 seconds).
The Cracco-style egg is ready: salt lightly, then serve it on a bed of mashed potatoes, as I did, or even a simple salad, as you like.
