The crêpes lasagna they are a wonderful idea to bring an alternative lasagna to the table during the holidays or even, why not, on any Sunday during the year. A bit like potato lasagna, it is a very versatile recipe: in this case I have seasoned them with bechamel, potatoes, bacon and cheese, but nothing prevents you from varying and choosing a different sauce every time. How to make crepes lasagna
First wash the potatoes and put them to cook in cold water, boiling them for about 30 minutes.
At the end of cooking, peel and mash them.
While the potatoes are cooking, start making crêpes.
Put the flour, eggs, and milk in a bowl and whisk.
Add a pinch of salt, then mix until you get a homogeneous batter.
Heat a non-stick pan, melt a small piece of butter in it and start cooking the crêpes: pour a ladle on the pan, swirl it to expand the batter, then cook over medium-low heat.
When the edges begin to brown and peel off, gently flip the crepe over with a spatula and quickly cook the second side as well.
Continue like this for all the crepes.
As they are ready, stack the crêpes on a plate.
When the potatoes are ready and you have peeled and mashed them, season them with 50 g of parmesan and a pinch of salt and add the milk to make them creamier.
At this point, start assembling your lasagna: spread a little béchamel sauce on the bottom of a baking dish, then cover with a layer of crêpes (cutting and shaping them if necessary to create a single base).
Season with potatoes, diced provolone, chopped bacon and a little béchamel, then continue to create other layers in the same way.
Once you have reached the last layer of crepes, season only with béchamel and parmesan cheese, then cook for about 20 minutes in a preheated ventilated oven at 200 ° C.
The crêpes lasagna are ready, let them cool before cutting into slices and serving.
