Fregola recipe with vegetables from of 15-07-2018 [Updated on 02-10-2018]
There fregola with vegetables is a first course of Sardinian origin. Similar to cous cous but larger, fregola is a type of durum wheat pasta, typical of this region and for this reason particularly used, but also very popular, in Sardinia. After trying the most famous recipes with this type of pasta, fregola with clams and the one with sausage, I decided to also try this vegetarian version with vegetables, saffron and pecorino.
I must say that among the three, I particularly appreciated this version with vegetables which, especially in this summer period, falls perfectly;)
How to make fregola with vegetables
Clean the vegetables, peel the potato and carrot, then cut everything into cubes of the same size.
Brown the chopped onion in a pan with the oil and then add the vegetables.
Season with salt and pepper and cook for about 10 minutes.
Dissolve the saffron pistils in a little hot water.
Pour everything over the vegetables and continue to cook for another 5 minutes.
Cook the fregola in abundant salted water for just 5 minutes because it does not have to be completely cooked.
After draining it, transfer it to the pan and mix.
When cooked, add the grated pecorino and fresh basil.
Let it rest for a few minutes.
Your fregola with vegetables is ready to be served.
