Potato rosti (Rösti) is a dish of Swiss cuisine based on potatoes that is often enriched with onions, bacon, cheese, herbs and so on and so forth.My version of Potato Rösti includes the addition of speck, simple and really tasty.
These Potato Rösti are really delicious both alone and accompanied with Russian salad or tuna sauce, but even with a nice cucumber salad and Greek yogurt it would not be bad, the only care you need to have in the preparation of this recipe is to use some non-watery potatoes :)
How to make potato and speck Rosti
Peel the raw potatoes and cut them into julienne strips with a grater with very large holes.
Add the not too thinly chopped speck and 2 tablespoons of flour. Season with salt and pepper to taste (pay attention to the salt, since the speck is already very salty) and marjoram.
Mix the mixture well with your hands so that the flour can absorb the starch released by the potatoes.
Start making balls with your hands and then crush them to make them into small pizzas about 1 cm thick.
Then fry the Rösti in a non-stick pan with a little hot oil for 4 minutes per side.
Once golden on both sides, lift them making them drip well with oil.
Arrange the potato and speck pancakes on a serving tray and serve them still hot.
