Spaghetti with clams, also known in Naples as "spaghetti a vongole", are a classic of Neapolitan cuisine.
In Naples there are several ways to prepare this recipe: the spaghetti sauce can be cooked in white or with the addition of some tomatoes; you can cook the clams directly in the sautéed oil, garlic and chilli or let the clams open first with the steam and then add them to the sauté; and it can be prepared with clams or common clams, also called lupins.
This is the recipe that is usually prepared on the evening of Christmas Eve at my house, but spaghetti with clams are an excellent first course to always prepare, the recipe is very easy and quick to prepare, but it brings with it a flavor and a smell that reminds me of the sea ... in fact I went shopping and passing in front of a fish market, I let myself be tempted by the sight of these seafood and I prepared a spaghetti on the fly;)
How to make spaghetti with clams
Let the clams drain in water and salt for an hour
Fry the garlic and a pinch of chilli in plenty of extra virgin olive oil.
Drain the clams, add them in the oil and cook them over high heat, covering them with a lid, for a few minutes.
Let it cook until the valves have opened.
Shell half of the seafood and set aside some with the shell to put on plates.
Cook the spaghetti in abundant salted water, drain when al dente and sauté them in a pan adding the pepper and chopped parsley.
Serve the spaghetti with clams decorating them with the fruits with the shell you have kept aside.
