Zucchini and mint pasta salad recipe of 15-04-2011 [Updated on 24-05-2016]
With this pasta salad recipe I want to satisfy those who ask me to insert some more light recipes on the site. Without losing taste, I prepared a very light and tasty pasta salad with grilled zucchini, mint and philadelphia. Zucchini are one of my favorite foods in this period because they can be prepared in a thousand ways: grilled, sautéed, in batter but also raw in salads and since you like them so much too, I present to you the first salad of pasta of the season, can you taste it?
How to make Zucchini and mint pasta salad
Procedure to prepare the pasta salad with zucchini, mint and philadelphia
Wash and trim the courgettes and cut lengthwise into slices with a thickness of about one centimeter. Grilled zucchini on the plate.
Once cooled, cut the courgettes into strips and place them in a bowl. Add the mint, salt and oil.
Mix gently and leave to flavor for at least half an hour.
Meanwhile, cook the pasta in plenty of salted water. Drain it al dente and pass it under water to stop cooking.Once the pasta has cooled, pour it into the courgette and mint dressing.
Mix gently then add the philadelphia in chunks.
Put the pasta salad with the zucchini in the fridge to cool for at least half an hour. Serve the pasta salad with zucchini, mint and philadelphia and enjoy your meal!
