Recipe Baskets with lemon cream of of 07-06-2007 [Updated on 28-08-2018]
I actually wanted to make a nice lemon tart, but I like small things more (even if they are cacacazze to do) and since I didn't have the molds for tartlets, I opted to make baskets of shortcrust pastry with the cream with lemon ... To say that they managed a delight is little ... Try this recipe and let me know;)
How to make baskets with lemon cream
Mix the softened butter with the sugar and the egg.
Sprinkle in the flour, a teaspoon of yeast and a pinch of salt.
Knead and form a loaf and put it in the fridge.
Meanwhile, prepare the lemon cream.
Beat the egg yolks with the sugar, add the starch and milk.
Cook the cream with a lemon peel over low heat and stir constantly to avoid lumps.
As soon as the cream begins to thicken, add the lemon juice.
Then remove the lemon zest and set the cream aside to fill the baskets.
Roll out the dough with a rolling pin forming a sheet of about 3 mm and cover the inside of the cups.
Arrange the cups on a baking sheet and bake at 180 degrees for about 15 minutes or until golden.
Remove the baskets from the cups and arrange them on a serving plate.
Then garnish with the lemon cream and put in the fridge.
Decorate the baskets with lemon wedges.
