The fish stock is a concentrated fish broth, used for cooking fish and for the preparation of seafood risotto or fish soups. Since many have asked me for explanations for the preparation of the fish stock, I have put you the steps of the procedure for its preparation. What you see is a comic that I prepared with the scraps of a grouper :) Warning: in the case of the fish stock you will have to use bones and various clippings (excluding the entrails), in the case of the crustacean stock you will have to use heads and shells.

How to make a fish cartoon

Wash the fish scraps under running cold water. Clean and peel the vegetables.
Put the fish head and leftovers in a saucepan. Add the oil, parsley, 1 clove of garlic, a handful of cherry tomatoes and a pinch of salt, and cover with water.

Bring to a boil, skimming the comic from time to time with a skimmer.

Simmer the cartoon for about 30 minutes, until you get a thick sauce.

Filter the cartoon by passing it through a colander and use it for the required preparation.

You can keep the comic in the fridge for a couple of days, or in the freezer for a few months, perhaps in the bags to make ice cubes. In this way you can use it if necessary even in small quantities.
