We start by making the "sauce": we put the two carrots on the small grater and heat them in olive oil, when they are hardened we add two good spoons of pepper paste, 2 teaspoons of vegeta (according to taste, it also depends on the vegeta it's salty), the tomato juice and the chopped garlic, let it boil and turn off the heat. Let cool and meanwhile slice all the vegetables.
Put half of the sauce in the pan and spread it, then arrange the vegetables alternately; when we have finished placing the vegetables, we put the rest of the sauce and spread it evenly, cover it with aluminum foil and put it in the oven at 180/190 degrees for about 35/40 minutes, after which we check the vegetables and leave them without foil for a while.
