The cake with top and chocolate cream is prepared as follows:

Each cake top is cut in half and one is greased with half the cream, put the other sheet on the top, repeat and cover with the rest of the cream, then let cool for about 2 hours. Scrape the dark chocolate and sprinkle with plenty.

Crispy cake


One of the culinary recipes that I remember fondly from childhood, is the crantz, or so we called it and it was a very crunchy dessert, based on burnt sugar and nuts. But we did not want to submit our teeth to such an effort, so we rethought the recipe, so that in the end we get a crispy cake that contains chocolate and nuts and coconut.

I couldn't decide: white or dark chocolate, so I used both! As for the coconut flakes, I added them because I couldn't resist them! I haven't seen big coconut flakes in stores for a long time and they smelled so good that I had to buy them and put them in the recipe. For the top, I was inspired by the biscuit crust that I use for cheesecake and to keep all the ingredients together, I used condensed milk, which I knew in the oven would turn into a delicious caramel. A madness came out and I recommend it when you have a crazy craving for something sweet, but I recommend eating in moderation, because it is not the lightest cake in the world!

ingredients - for measuring the ingredients I used the same bowl (one of 250ml for all the ingredients, so I did not weigh them, it is important that the layers are equal)
& # 8211 150g melted butter
& # 8211 a teaspoon of vanilla extract
& # 8211 a bowl of crushed biscuits
& # 8211 a bowl of chopped white chocolate
& # 8211 a bowl of dark chocolate flakes
& # 8211 a bowl of coconut flakes

& # 8211 a box of sweetened condensed milk (395g)

I heated the oven to 180 ° C and lined a 20x20cm tray with removable walls with baking paper. On the bottom of the tray I poured the melted butter, mixed with vanilla and I spread it all over the tray. I then put the biscuits, then the white chocolate, then the dark chocolate flakes. It is very important to even out each layer and press it lightly by hand to compact it.

Then follow the coconut flakes, chopped walnuts and finally the condensed milk, which I poured carefully, so that it covers the whole tray well and I evened it out using a spatula. Then I baked the tray for 18-20 minutes, until the cake made a nice crust and browned. I let it cool very well (in the cold outside, an hour on the balcony was more than enough).

After the hour when I looked at the window at least 3 times because I couldn't feel the urge, I cut the cake. It smells exceptional, it is very fragrant and it takes less than 5 minutes to assemble it, so it is not surprising that it was our dessert for the weekend. You're welcome!

Because I'm a big lover of chocolate and because I love it in combination with rum flavor, I couldn't help but make a portion of homemade almonds, prepared step by step. It is not prepared as hard as we think and the results are wonderful. We get a delicious cake, syrupy and flavorful, much better than those on the market. Honestly, we haven't found good cakes in our confectioneries for a long time. All are made from premixes and are full of margarine. Butter recipes seem to have been lost.

As I told you, the almond recipe is simple. The top is a fluffy pandispan with cocoa, the syrup is made easily and quickly from water, sugar, rum and cappuccino powder. If you don't have cappuccino, you can replace it with a little instant coffee. The cream is also easy to make and does not require cooking. However, you need butter with 80% fat, good quality cocoa and rum essence. It is good for anything and keeps very well in the refrigerator. The classic almond recipe had a chocolate fondant icing, but this is hard to make and far too sweet for my taste, so I gave it up.

Instead, I made a dark and good chocolate ganache. After you have prepared all the component parts of the cake, you just have to assemble it and leave it in the fridge. Glaze it, put a word of cream on top and the wonderful almonds are ready. Only good to devour. With a pleasant taste of butter and cocoa and with a delicate rum aroma. Just like the almonds of our childhood. You will be surprised at how fast they will fly from the plates and I assure you that they will please everyone.


Napoleon cake

Mix the almonds with the butter, sugar and flour. Incorporate beaten eggs with salt. The dough should be quite sticky. Shape a roll out of it, cover it with foil and leave it to cool for an hour.

Cut rounds and spread them lightly. Place them on a tray lined with baking paper and bake for about 5-8 minutes. Rub the yolks with 50 g of sugar until the sugar melts. Add cold milk and chocolate. Leave on the fire in a bain-marie, stirring constantly until the composition begins to thicken.

After it has cooled, add gelatin soaked in three tablespoons of cold water. Leave in the fridge until it cools completely, then incorporate the mascarpone cream and whipped cream with the rest of the sugar. Divide the cream between three crispy biscuits. Then decorate the cake with melted chocolate and leave to cool for at least an hour.
