  • 45 mL Hennessy V.S or Hennessy V.S.O.P
  • 15 mL lime juice
  • 7.5 mL simple syrup
  • 1 sprig of fresh mint

Place one mint sprig in the bottom of a shaker tin and press to bruise with a muddler.

Add all liquid except ginger ale to the shaker with ice and shake until chilled.

Strain into a highball glass with fresh ice, top with ginger ale and garnish with a mint sprig.

  • 30 mL fresh lime juice

The classic Sidecar is perhaps the most iconic cognac cocktail in the world. It’s thought to have originated from Harry’s New York Bar in Paris and features a light, bright mix of cognac, Grand Marnier, lemon juice, and simple syrup. To learn more about this crowd-pleasing drink, we chatted with Jordan Bushell, the head of mixology and brand education at Hennessy U.S.

“The cocktail itself may be based on a Brandy Crusta, which was created in New Orleans at the Jewel of the South bar in 1840,” Bushell says. “Regardless of the influence of the Crusta, many believe it was created at the famous Harry’s New York Bar in Paris for an army captain who rode up to the bar in the sidecar of a motorcycle. There is a strong possibility if they did not create it, they were familiar with the recipe, as it is mentioned in the cocktail book Harry’s ABC of Mixing Cocktails. London laid claim to the cocktail just after the end of World War I with a similar story about the army captain and his bike, substituting Harry’s Bar for the Buck’s Club.”

Cognac is a type of brandy that is double-distilled from white grapes and can only be made in Cognac, France. This means that all cognacs are brandies, but not all brandies are cognacs. This double-distillation process yields a brandy that is technically referred to as eau-de-vie, which must then be aged in French oak barrels for a minimum of two years.

All The Passion Fruit Flavors

I've long been a fan of the sweet, tart, floral flavor of fresh passionfruit. And, when I met my husband and started spending more time in Hawaii, well, I started coming across a lot more of the passion fruit (aka lilikoi in Hawaiian) flavors.

From passionfruit margaritas at a wedding and passion fruit iced tea to passion fruit filled malasadas and even the passion fruit custard pie our friend would make from scratch, the flavor showed up seemingly everywhere. No surprise since the vine seems to grow with abandon across the islands.

Finding Fresh Passion Fruit

Fresh passion fruit can be hard to find on the mainland. Sometimes I find it growing rogue in a friend's backyard and every once in a while it pops up at the farmers market. But, more often than not, you need to buy passion fruit jucie or even frozen passion fruit pulp to get good passion fruit flavor.

Recipe Summary

  • 1 ½ pounds fresh pineapple chunks (peeled)
  • 2 tablespoons dark brown sugar (packed)
  • ½ pound fresh pineapple (2 cups diced)
  • 1 cup mint leaves (lightly packed plus sprigs for garnish)

  • ¾ cup lime juice (freshly squeezed)

  • 1 ¼ cups club soda (chilled)

In a saucepan, bring the pineapple, brown sugar and 4 cups of water to a boil. Simmer over moderately low heat, stirring, until the pineapple is very soft and the mixture is reduced to 2 1/2 cups, 40 minutes. Strain the mixture into a heatproof bowl, pressing on the solids discard the solids. Let the syrup cool you should have about 1 1/3 cups.

In a pitcher, muddle the pineapple and mint leaves. Stir in the rum, lime juice and 1 cup of the pineapple syrup. Pour into 8 glasses and add ice. Top with club soda and garnish with mint sprigs and lime wedges.


Alyssum

While some cocktails, like the Mai Tai and Mint Julep, are best enjoyed in the hotter months and other drinks, like the Hot Toddy, are consummate winter sippers, the Alyssum manages to work as an all-season libation. Cognac, cinnamon syrup and vermouth make for a lush and rich cocktail, while grapefruit juice, overproof rum and crushed ice make it refreshing year round.

The Alyssum calls for Hennessy V.S.O.P Privilege cognac as its base. The initials stand for Very Superior Old Pale, which assures that the brandy is aged for at least four years, and often this blend has older brandies in the mix as well. While the name Hennessy connotes an extravagant, expensive indulgence, the Privilege is a reasonably priced cognac, usually clocking in under $60. If that’s too high a price to include in a cocktail with grapefruit juice and overproof rum, however, substituting a more affordable V.S.O.P. or even a V.S (aged two years and generally about $20 cheaper) is an acceptable move.

Luxardo Bitter Bianco is a bright and bittersweet vermouth that adds floral and botanical notes to the drink, and pairs lovingly with ruby grapefruit juice. Then, rather than a simple syrup, the drink is sweetened with a cinnamon syrup that lends a rich warmth to the final product.

One key ingredient in this drink is a float of Lemon Hart & Sons 151 Demerara Rum. This high proof Guyanese rum was something of a legend for a while. A favorite rum of Tiki enthusiasts for its bold, assertive flavors and gentle sweetness, Lemon Hart mostly disappeared from US shelves in the early part of the 2010s, though it did eventually return. Even today it can be tricky to find in some states, but that helps maintain its arcane status. For those who can’t find it, its closest analogue is Hamilton 151 Demerara Rum. Either way, it’s important to serve the Alyssum with a straw so that you or your guests are not getting a mouthful of 151 proof rum with the first sip.
