Biscuit salami with candied pineapple

RECIPE PREPARATION Candied pineapple salami with candied pineapple:

Put the milk with the sugar on the fire and when it has melted and it is hot, take it after the fire and add the raisins, cocoa and margarine cubes. Stir until it melts and add the diced pineapple.

Crush the biscuits with the rolling pin and pour the warm composition over them, add 3 tablespoons of liqueur and rum essence. We put the composition in a foil and roll it like a salami. We leave it cold in the evening until morning and when we take it out of the foil we cut it with a knife moistened under warm water

From the biscuit ingredients a dough is formed, which is carefully turned over in a tray lined with waxed paper. Bake for 15 minutes at 200 degrees C. Then, with the help of a clean and damp kitchen towel, which is placed directly over the tray, turn it over firmly on the "work surface". Carefully remove the baking paper and roll it carefully.

Make a cream from Mascarpone, sour cream, juice, sugar and gelatin, previously soaked and then "melted" for a few seconds in the microwave or bain-marie. Drain the pineapple slices well and cut the pieces. One bat 200 ml. whipped cream and mix with the pineapple pieces. The cream and pineapple composition is mixed with the Mascarpone composition.

Unroll the top and syrup with the canned pineapple juice. Distribute the entire composition on the unfolded countertop. Then, with a large, long knife, cut the cookie sheet, greased with cream, into 4 cm strips. width. Wrap the cookie slices on a cake plate, one after the other, in the shape of a snail, with cream on the inside.

Before finishing, the cake is left to cool for an hour, after which it is continued with its "beautification", ie with the "dressing" of the cake with the rest of the whipped cream (200 ml) beaten hard. The coconut flakes brown a little in a fat-free pan and then sprinkle on the outside of the cake and a little in the middle. Cut the fresh pineapple and garnish the cake with pineapple pieces and coconut pralines.

Walnut biscuit salami

Try the easiest and most delicious recipe for walnut biscuit salami! A cheap and simple way to satisfy the craving for sweets.

Crush the biscuits by hand until you get the small pieces. Mix with walnuts (or raisins) cut into small pieces, if using.
Put 60 ml of milk and sugar in a saucepan and boil until a bound syrup is made (about 1 minute after the syrup starts to froth).
Add the butter and stir until it melts.
Add cocoa (and coffee if using) dissolved in 60 ml of milk. Add the rum essence. Let it boil.
Gradually pour the syrup over the biscuits, stirring from time to time until you see that the biscuits bind and soften a little. You may not need all the syrup.
Sprinkle a little cocoa (or chocolate powder) on a plastic wrap and put half of the composition. Roll tightly into a roll and push both ends out of the salami. Tie tightly at both ends and refrigerate for a few hours or overnight. Repeat with the rest of the composition.
Cut into slices and serve.

How to make biscuit salami?

I prepared everything in advance in bowls so I could go straight to work: raisins, cranberries, candied lemon and orange peel, grated lemon peel, chocolate, almonds, nuts, shit, grated coconut as well as cinnamon and cocoa. You already know that we don't really use & # 8222essense & # 8221 (we avoid especially the rum one that has the aroma of a communist confectionery) and we prefer to flavor the cakes with natural ingredients or with aromatic drinks like real rum, almond liqueur or oranges (this was not the case because they were children).


Preparation of ingredients for vanilla candied ginger sauce

Because I wanted the candied ginger to have a sauce consistency, I grated the ginger on a small grater. But you can also cut it into small cubes or thin slices. When the ginger is grated, a sticky part remains that does not pass through the grater. That sticky part is not put in the composition, but you can & # 8222 recycle & # 8221 it in a lemonade with mint and ginger.


Raisin, pineapple and ginger cake

& # 8211 for countertop - 4 eggs, 100 g raisins, 120 g raw sugar, 150 g flour, 1 sachet baking powder

& # 8211 for cream- 250 g mascarpone, 60 g powdered sugar, 100 g candied ginger, 50 ml cognac, 1 pineapple compote (345 g net), 300 ml cream

Put the ginger in a bowl, pour the cognac, cover and leave until soft, about 2 hours.

Mix the eggs with the sugar, add the baking powder, flour and mix. Mix with the raisins and spread evenly in a tray lined with baking paper. Put in the preheated oven over medium heat for about 20-25 minutes (toothpick test) then cool.

Drain the fruit from the compote (if it is round, cut it into pieces). Mix the whipped cream. Mix mascarpone with sugar until creamy, add ginger, pineapple and mix. Incorporate in the cream, stirring with a spoon. Hydrate the gelatin in 5 tablespoons of compote juice for 10 minutes. Dissolve it over low heat, stirring constantly for approx. 1 minute taking care not to boil. Pour over the composition and mix to obtain the cream. Put in the fridge for 30 minutes.

Remove the paper from the worktop and place on a plate. Spread the cream evenly and put in the fridge for a few hours. We portion and serve.

We will prepare the dough: put the flour in a bowl, and in the middle of it we will make a hollow. We will heat the milk 200 ml a little (attention! Not to be hot, but warm) we will mix with the yeast and a spoonful of sugar. We will pour this mixture over the flour and we will leave it for 15 minutes until a kind of foam grows. Then we add the 2 eggs, butter and 8 tablespoons of sugar. We will mix everything well until we get the dough. If necessary, you can add a little more flour, but do not overdo it - the dough should come out soft. Divide the dough into six parts, proportionally. From each side we will create an average ball, in size - a total of 4-6 sheets of dough, depending on how thick we want to have it. Then we will leave them for 10 minutes, during which time we will prepare the filling.
